The scones with paprika and pecorino are delightful bites to enjoy both as an appetizer or as part of a starter, delicious on their own but can be filled like small sandwiches to your liking.
Scones originated in Scotland, now an undisputed symbol of the British Isles for afternoon tea, a sweet version to be filled with clotted cream, a dense cream obtained from unpasteurized milk, or with a simple strawberry jam.
I, who love savory flavors, made scones with paprika and pecorino, simple to make and full of flavor, really delicious, one leads to another!
A clever recipe because no leavening time is needed thanks to the addition of instant yeast for savory cakes.
- Portions: 12
- Cooking methods: Oven
- Cuisine: English
- Seasonality: All Seasons
Ingredients
- 2 cups all-purpose flour
- 7 tbsps butter
- 4 oz grated pecorino cheese
- 1/3 cup milk
- 2 eggs
- 1 egg for brushing
- Half packet of instant yeast for savory cakes
- to taste sweet paprika
- to taste fresh chives
Tools
- Cookie Cutter
Steps
In a bowl, pour the sifted flour mixed with the yeast, also incorporate the grated pecorino and mix the two ingredients with a spoon.
Add a generous sprinkle of paprika and stir again with the spoon.
Incorporate the two eggs and the butter softened for a few seconds in the microwave; if you don’t have a microwave, take it out of the fridge an hour before.
Add the milk and finely chopped fresh chives; if you can’t find fresh chives, dried is fine too.
Knead the ingredients, obtaining a nice soft dough.
Dust the work surface with flour and roll out the dough with a rolling pin; the sheet should not be thin but rather thick, about half an inch.
Use a cookie cutter to cut out the scones and place them on a baking sheet lined with parchment paper.
Brush with a beaten egg.
Bake at 392°F for about 20-25 minutes, ensuring they are nicely golden before removing from the oven.
The scones with paprika and pecorino are perfect for those who love a savory breakfast like the English. Cut in half and filled with spreadable cheese and ham, they are top-notch!
