Salmon and Gorgonzola Crostini

Salmon and gorgonzola crostini are a very tasty appetizer ideal for the holy holidays or any special occasion, also great for aperitifs and buffets.

  • 8 slices homemade bread
  • 4 oz smoked salmon
  • to taste gorgonzola
  • Juice and zest of 1 lemon
  • 1 sprig parsley
  • 1 clove Garlic (Optional)

Steps

  • Let’s see how to prepare the crostini.

    First, slice the bread and place the slices on the hot oven rack and toast for about 3 minutes — they should be a bit crunchy but not too much. When ready, take the garlic clove and rub it over the hot toasted bread so it melts slightly on top. Spread gorgonzola over the bread slices, add the smoked salmon, a few drops of lemon juice and a little grated lemon zest, chop the parsley and sprinkle it over the crostini. Place the crostini on a wooden cutting board and bring to the table with a few parsley sprigs.

Notes

I didn’t add it, but you can also drizzle a little extra virgin olive oil on top. If you have leftovers, store them in the refrigerator covered with plastic wrap for one day.
