Crispy baked zucchini are an easy, economical and decidedly flavorful side dish. If you also need to make oven vegetables more appealing because they aren’t very popular at home, this recipe will definitely do the trick. Zucchini, as you know, aren’t wildly flavorful (I like them) but many wrinkle their noses when they see them on the table, hence the need to be resourceful to find a tasty and practical solution that can please everyone. To make crispy baked zucchini you’ll need only a few simple ingredients that we almost always have at home. If you like, you can also use fresh herbs from your garden to add more flavor to this already very tempting side dish. Ingredients for crispy baked zucchini
- 2 Zucchini (medium-sized)
- 5 tbsps Breadcrumbs
- 3 tbsps Pecorino (or Parmesan)
- 1 clove Garlic
- 6 tbsps Extra virgin olive oil
- to taste Aromatic herbs (chopped (I use sage, thyme, basil and rosemary))
- to taste Salt

Preparation of crispy baked zucchini
Let’s start preparing our crispy baked zucchini by washing them thoroughly, drying them, slicing them into not-too-thick slices (mine are about 1/8 inch) and placing them in a bowl with the tablespoons of oil. Mix well and set aside.
On a plate, mix the breadcrumbs, grated cheese, chopped garlic and the aromatic herbs you prefer or have on hand. Mix well and then coat the zucchini slices on both sides.
A tip to prepare them even faster: after slicing the zucchini and seasoning them with oil, prepare the breading and put it into a food bag, add the seasoned zucchini, seal and shake well.
This way the zucchini will be evenly coated in a few moments and, above all, you won’t dirty a bunch of dishes!
Arrange the zucchini in a fan shape in a lightly oiled baking dish, season with a pinch of salt and bake at 356°F in a conventional (non-convection) oven for about 20 minutes. After that time the zucchini will be cooked and will have formed a crispy crust on the outside. Serve them hot and enjoy!
