Ingredients
Ingredients for a loaf pan 10.5 x 25 cm (approx. 4 1/8 x 9 7/8 in)
- 1 3/4 cups all-purpose flour
- 3 eggs (medium)
- 5 tbsp unsweetened cocoa powder
- 3/4 cup brown sugar (or granulated)
- 1/3 cup sunflower oil (or corn oil)
- 3.4 fl oz milk
- 1.8 oz dark chocolate (50%)
- 5.3 oz Nutella®
- 1 pinch fine salt
- 1 packet baking powder

Steps
Preparation of the Chocolate and Nutella Plumcake in the Air Fryer
Before you start, I recommend chopping the chocolate to add to the batter and having the pan greased and floured so everything is ready.
In a large bowl, using the electric whisk, beat the eggs with the brown or granulated sugar for a few minutes until you obtain a pale and foamy mixture.
Slowly add the vegetable oil in a thin stream while continuing to beat the mixture.
Also add the milk in a thin stream and mix.
In another bowl, mix the flour and cocoa and sift them into the egg mixture. Add a pinch of salt and continue beating with the whisk until you have a smooth, lump-free batter.
Chop the chocolate on a cutting board and fold it into the batter. Gently mix with a spatula.
Now also incorporate the sifted baking powder and mix again with the spatula.
Pour the batter into the previously greased and floured pan and spread the Nutella in the center.
Preheat the air fryer for 2–3 minutes and place the pan on the rack. Cook using the bake or air fry program for 35 minutes. Perform the skewer test in several spots, not before 25 minutes. If it comes out dry the cake is done; otherwise continue cooking.
Leave the plumcake in the air fryer with the door slightly ajar for 5 minutes before removing it.
Let it cool completely and unmold.
Slice and serve. A soft, tender and just-moist-enough plumcake, perfect for dunking in milk in the morning 💕

Preheat the oven to 356°F and bake for 40–45 minutes. Always perform the skewer test in several spots — if the skewer comes out dry the plumcake is ready, otherwise continue until fully cooked.

The plumcake stays soft for 2–3 days (if it doesn’t get eaten sooner 😁) under a cake dome or wrapped in plastic wrap.
Tips
You can adapt the pan if you don’t have a loaf pan: a 22 cm (approx. 8 11/16 in) round pan is perfect to replace the loaf pan.
The larger the diameter, the lower the cake will be; the smaller, the higher and the longer it will take to bake. Or if you use a smaller pan suitable for your air fryer, you can use the remaining batter to make muffins.
The Nutella in the center can give a false reading on the skewer test: if you pierce the center and it’s not dry, that’s normal. Check the edges and the highest point of the cake as well.
For optimal cooking in an air fryer, especially with only top heating (one element), use aluminum or nonstick pans — they are the best heat conductors. Avoid silicone and avoid lining the pan with parchment paper.
Let the pan rest 5 minutes with the door slightly ajar before removing it from the oven or air fryer so the cake doesn’t risk collapsing.
Variations
Chocolate:
– Dark: for a more intense and less sweet result, ideal for lovers of strong flavors.
– Milk: perfect if you prefer a sweeter cake.
