Some side dishes aren’t meant to amaze, but to make everything else work.
Basmati rice is one of them: light, fragrant, and neutral enough, perfect to accompany spiced or saucy dishes like chicken curry.
When days are full and dinner has to be squeezed between coming home, showers and a thousand other things, I rely on the Instant Pot.
It allows me to cook without constantly checking, while I can take care of the rest of the family.
This is my tried-and-true method to get fluffy, non-sticky and always reliable basmati rice… provided you pay attention to a few details.

Passaggi
Place the rice in a bowl and rinse it gently under cold running water.
Do not rub the grains: just move the rice with your hand.
Repeat 3–4 times until the water is cloudy but not milky.
Drain well without leaving it to soak.
Mistake: washing it too long or rubbing the grains can break them and make them clump during cooking. Gentle washing = separate, light grains.Pour the drained rice into the Instant Pot.
Add the water, salt and, if you like, 1 tsp of oil.
Do not stir too much; just distribute the liquids evenly on the bottom of the pot.Close the lid and set:
Pressure Cook / Manual
High pressure

Make sure the valve is in the closed position. At the end of cooking, leave the Instant Pot to natural release for 10 minutes without opening.
This step allows the rice to finish cooking and absorb the moisture.
Mistake: opening the lid immediately or venting too soon can make the rice clump.Open the lid, let it rest for 1–2 minutes, then gently fluff the rice with a fork.
If the grains tend to stick together, you can add a drizzle of oil and mix gently.
Mistake: fluffing immediately or too forcefully can crush the still-hot grains.
Tips and variations
For very flavorful dishes (curries, stews, spiced vegetables) it’s better to keep the rice neutral.
You can add a bay leaf during cooking (remove it at the end) for a delicate aroma.
If there are leftovers, store them in the fridge for 1–2 days and reheat easily without losing texture.
Rice type: some non-aged basmati varieties tend to be slightly sticky.
FAQ – Basmati rice in Instant Pot
Do I have to wash basmati rice?
Yes, always. Rinse it gently under cold water 3–4 times until the water is cloudy, without rubbing the grains. Do not leave it to soak: this helps remove excess starch and achieve a fluffier rice.

Why does my rice come out sticky or clumpy?
Main causes:
washing too aggressively or broken grains
opening the lid too soon
insufficient steam release
using non-aged rice
On very busy days, not everything has to be perfect: rice in the Instant Pot cooks by itself, you can take care of the rest of dinner and still have a perfect side dish.
