Greek Yogurt and Jam Muffins: Soft and Easy to Make

in ,

Greek yogurt and jam muffins are soft, fragrant treats perfect for breakfast or an afternoon snack. An easy recipe to prepare in just a few minutes, with jam swirled into the batter for a tender, indulgent result.

These Greek yogurt and jam muffins are one of those simple recipes that always bring great satisfaction. Soft, aromatic and easy to make, they are perfect when you crave a homemade treat without fuss. The batter comes together in minutes with common ingredients and can be mixed by hand or with an electric mixer.

What makes these muffins even more appealing is the jam swirled into the batter: it is added on top and gently swirled with a toothpick to create a marbled effect that makes them look beautiful and taste even more delicious. During baking the jam melts into the batter, giving the muffins a delicate aroma and an even softer texture.

The Greek yogurt is the ingredient that makes the difference: it renders the batter particularly soft and moist, keeping the muffins tender even the following days. They are therefore perfect to prepare in advance and keep ready for breakfast or a sweet break during the day.

These muffins are ideal for breakfast, snack, or a small homemade dessert buffet, and can be easily customized by choosing a different jam each time: apricot, strawberry, mixed berries, or whatever you have in the pantry. The result will always be a simple, wholesome, irresistibly soft treat.

Recipe for Greek Yogurt and Jam Muffins

  • Start preparing the Greek yogurt and jam muffins by placing the all-purpose flour, sugar, baking powder, vanillin and salt in a bowl.
Mix well to combine all the dry ingredients and set aside.

  • In another bowl, crack the eggs.
Add the Greek yogurt and beat everything with a whisk – by hand or with an electric mixer – for a couple of minutes.

  • While continuing to mix, slowly drizzle in the sunflower oil.

  • Do the same with the milk.
For an even better result you can replace the milk with an equal weight of BUTTERMILK.

  • Add the dry ingredients to the wet ones.
Do it in two or three additions, mixing well before each addition.
You should obtain a homogeneous and fairly thick batter.

  • Transfer the batter into a muffin tin, filling the paper liners about two-thirds full.
You can use a spoon or an ice cream scoop.

  • Place a teaspoon of jam in each liner.
Swirl the jam with the help of a toothpick. It should not fully blend in but should create a marbled effect.

  • Bake the Greek yogurt and jam muffins in a preheated conventional oven at 356°F for 25 minutes.
