Ingredients

  • 4 zucchini (large)
  • 3.5 oz ricotta
  • 3.5 oz Grana Padano cheese, grated
  • 1 shallot
  • 2 eggs
  • 2.1 oz breadcrumbs (1 oz for filling + 1 oz for baking dish and topping)

Steps

  • The first step is to blanch the fresh zucchini for about five minutes to make them tender yet still crisp. Once ready, carefully cut them in half lengthwise. Gently remove the central pulp (you can use a teaspoon), which you will use to prepare a succulent filling.

    In a large pan, sauté a finely chopped shallot with a drizzle of extra virgin olive oil. Then add the previously extracted zucchini pulp, a pinch of salt, and ground pepper.

    Meanwhile, in a large bowl, mix the ricotta with the grated Grana Padano, add the cooled zucchini pulp, a grating of nutmeg, and gently blend everything together.

    Add two tablespoons of breadcrumbs, which will provide a slight crunch, and the eggs, which will ensure a soft and creamy texture. If needed, adjust the taste by adding a pinch of salt.

    Carefully and patiently, fill the hollowed zucchinis with this delicious filling, distributing the mixture evenly. Transfer the stuffed zucchinis to a previously oiled and breadcrumb-sprinkled baking dish.

Bake the dish in a preheated oven at 356°F and let it cook for about 20 minutes, until the zucchinis are tender and the filling has reached its perfect consistency.
