A simple and quick dessert, perfect for summer or a special occasion. So here I am to present the recipe for sour cherry tiramisu without cream made with a single yolk in the mascarpone cream. A simple, quick dessert that you can serve right away — as they often say in restaurants — an express sour cherry tiramisu.
If you can’t find the Vicenzovo Pink ladyfingers at the supermarket, feel free to use classic ladyfingers or any other cookie you prefer. For example, I don’t like tiramisu with pavesini, but I love tiramisu with Oro Saiwa. So, everyone has their own tastes and knows those of their family or guests who will enjoy this fresh and indulgent sour cherry dessert.

Ingredients for the sour cherry tiramisu recipe
- 30 sour cherries in syrup (from Fabbri 1905)
- 20 ladyfingers (Vicenzovo Pink limited edition)
- 7 oz mascarpone (about 3/4 cup)
- 1 egg yolk
- Half glass milk
Set aside 4–5 tablespoons of the sour cherry syrup that we’ll add to the milk at room temperature to soak the ladyfingers and make today’s sour cherry tiramisu.

In the list of useful tools to prepare the sour cherry tiramisu I indicated both the serving dish and the jars. You can prepare the classic version of tiramisu, with the layers neatly arranged in a rectangular or square dish, or you can serve the sour cherry tiramisu as I did. I used relatively large jars, the jam jars, which I save for occasions like this. This way you can serve the single-portion tiramisu with sour cherries in these delicious jars, like at a restaurant, and enjoy an express tiramisu that’s a little different.
Steps for the sour cherry tiramisu recipe
Let’s start preparing the tiramisu without cream by making the mascarpone cream. Take a bowl with high sides and add the mascarpone. Crack the egg and add only the yolk to the bowl.
We won’t use sugar, but if you prefer a sweeter cream you can add about 15 grams of powdered sugar or white sugar. I preferred to omit it. If you like lemon, and you often use it in desserts like I do, you can add a tablespoon of lemon juice: it will make the mascarpone cream fresher.
Turn on the electric mixer and work the ingredients until you obtain a smooth, fluffy cream. Transfer the cream into a piping bag using a spatula. Choose a wide tip, since you’ll be creating layers of cookies and cream inside the tall jars. Place the cream in the refrigerator to rest for about 10 minutes.
After this time, we can proceed with making the express sour cherry tiramisu. Place the jars you’ve chosen on your work surface. Take a shallow plate or a small bowl and pour in the milk and 2–3 tablespoons of the sour cherry syrup, mixing well. We’ll use the milk and syrup instead of the classic coffee, which would darken and change the color and flavor of the pink fruit ladyfingers.
Also take the sour cherries from the jar and keep them nearby on the work surface. I preferred to leave them whole, but you can halve or chop them to distribute through the layers. Start by quickly dipping the first ladyfinger into the milk and syrup mixture, gently breaking it with your hands, and placing it at the bottom of the glass jar.
Take the cream back from the fridge and use the piping bag to pipe it evenly over the fruit ladyfinger. With a small fork or a spoon you can place the sour cherries. I added two or three cherries per layer so the dessert would be a rich and indulgent tiramisu spoonful after spoonful.
Continue until you reach the top of the jar, placing a single cherry in the center. At this point, if you like, you can dust with unsweetened cocoa powder as I did. The sour cherry tiramisu without cream is ready to be served!
You can refrigerate the jars, or the baking dish if you didn’t make individual portions like I did, for a couple of hours before serving the sour cherry tiramisu with mascarpone cream. Remember not to keep it for more than one or two days: we didn’t pasteurize the egg, so this dessert is meant to be eaten fairly quickly.

Tips and variations for the sour cherry tiramisu with strawberry limited edition ladyfingers
Tips: I’ve already written many throughout the tiramisu recipe, but I’d like to emphasize them in this tips and variations section. I recommend using no more than one yolk because it would change the color and taste of the mascarpone cream too much; in this recipe it stays neutral and pairs perfectly with the sour cherries. I also advise against adding sugar or cocoa to the dessert: in my opinion they would weigh down the final result.
As you may have guessed, the variations come from the tips. So, if you want, add sugar to the mascarpone cream and, if you like, cocoa — preferably unsweetened and only on the top layer. As mentioned earlier, if you enjoy it, a splash of lemon in the cream is never wrong. If you have family members or guests who are lactose intolerant, you can use lactose-free mascarpone and milk so everyone can enjoy this dessert together.
The last and most obvious variation concerns the ladyfingers. I asked yesterday afternoon if there were any Vicenzovo Pink ladyfingers left in our store and they were sold out. So, necessarily, you’ll have to fall back on classic ladyfingers to make this tiramisu.
