- 4 tbsps Extra-virgin olive oil

How to make Pasta with Leeks
Let’s start preparing pasta with leeks: slice the leek into rounds and wash it thoroughly to remove any traces of dirt.
Place the leek in a pan with 3 tbsps of extra-virgin olive oil and 1/2 cup of water, add a pinch of salt and pepper and cook for about ten minutes.
Meanwhile, cook the pasta according to the time indicated on the package. When the leek is cooked, set aside a couple of rings for decorating the dish and put the remaining leek into the immersion blender jug, reducing it to a cream, adding a couple of tablespoons of the pasta cooking water to make the cream smoother.
When the pasta is cooked, pour it into the pan where the leek was cooked, add the leek cream and mix well; if it seems too dry, add a couple of tablespoons of the cooking water. Plate the pasta with leeks, add the leek rings previously set aside and sprinkle with some pepper.
