Orange and yogurt muffins are delicious treats perfect at any time of day — for breakfast, an afternoon snack or after a meal, basically whenever you’re in the mood for something tasty. They’re easy to make, keep for several days and are easy to transport, so they’re also perfect for children’s school snacks. If you are lactose intolerant you can use lactose-free yogurt or plant-based yogurt — I recommend using plain yogurt since orange is added later; if you use fruit-flavored yogurt you may end up with too many flavors that don’t go well together. If you like, you can add chocolate chips. If you’re looking for other muffin ideas I recommend MUFFINS FOR BREAKFAST and all the Muffin Recipes. How to make Orange and Yogurt Muffins
Let’s start making the orange and yogurt muffins. Melt the butter in the microwave or in a bain-marie. Crack the egg into a bowl and add the sugar; beat everything until you obtain a pale, fluffy mixture. Wash the orange and grate the zest directly into the bowl, then squeeze the juice and set it aside.
Pour the yogurt into the bowl, add the melted butter in a thin stream while continuing to mix with the beaters. Add the sifted flour and baking powder, then gradually add the orange juice, mixing until you have a creamy, lump-free batter.
Preheat the conventional oven to 356°F, place the paper liners in the muffin tin and pour the batter to about 3/4 of each liner. When the oven is hot, bake the Orange and Yogurt Muffins for 20 minutes. Before removing them from the oven, perform the toothpick test — baking time may vary depending on your oven.
How to store Orange and Yogurt Muffins
Store them at room temperature inside a cake tin.
