Super-soft apple cake is a dessert ideal for breakfast, snack or after a meal; everyone always likes it, it is quick to make and super easy. You’ll obtain a tall apple cake like mine using a 20 cm pan (like this HERE ) — if you use a larger pan the cake will be lower but equally good and fluffy. To prepare this butter-free apple cake you only need an electric hand mixer (I use this HERE ) to work the eggs; no stand mixer or blender is necessary.   • 2 apples
  • 2 eggs
  • 2/3 cup granulated sugar
  • 3 1/2 tbsp sunflower seed oil
  • 2/3 cup Greek yogurt
  • 1 2/3 cup all-purpose flour

How to make the super-soft apple cake

  • Let’s start preparing the super-soft apple cake: pour the eggs into a bowl, add the sugar and beat with the electric hand mixer for a few minutes until you obtain a pale, airy mixture.

  • With the mixer running, add the oil little by little, then add the grated zest of one lemon, the Greek yogurt and mix well to incorporate.

  • Sift the baking powder and the flour directly into the bowl and incorporate to obtain a creamy, lump-free batter. Peel the apples, remove the core, slice half an apple into thin slices for decorating the cake and chop the remaining apples into small pieces.

  • Pour the chopped apples into the bowl with the batter and mix.

  • Grease (or butter) and flour the pan, pour in the batter, level it and arrange the apple slices on top.

  • Bake in a conventional preheated oven at 356°F for 40 minutes; before removing, perform the toothpick test — if the toothpick comes out moist, continue baking for a few more minutes.

  • When baked, remove the cake from the oven and let it cool before taking it out of the pan. If you like, dust with powdered sugar or serve it plain.

How to store the super-soft apple cake

Store it at room temperature, inside a cake tin, for 2–3 days.
