- 2 yellow onions
- 1 1/3 lb potatoes
- 4 1/4 cups vegetable broth
- to taste salt
- to taste extra virgin olive oil
- to taste chopped parsley
- 1 sprig rosemary
How to make Potato and Onion Soup
Let’s start preparing the potato and onion soup: prepare the vegetable broth, peel the potatoes and cut them into chunks, clean the onion and slice it thinly.
Put the sliced onions, the potato pieces, the rosemary sprig and the broth into a pot.
Place over the heat and cook for 30 minutes, stirring occasionally. When the soup is ready, stir well and lightly mash some of the potatoes to obtain a creamy soup; season with salt and if you prefer a creamier texture add more vegetable broth.
Serve the onion and potato soup in bowls, adding a sprinkle of parsley and a drizzle of extra virgin olive oil.
