- 1 Avocado (ripe)
- Salt

- 2 tbsp Lemon juice

How to make Avocado toast with egg
Let’s start preparing the Avocado toast with egg. First, cook the eggs; you can choose to poach them or make them soft-boiled. I love the yolk very runny so I then scoop it up with the bread. If you want them soft-boiled, place them in a small saucepan and, from the moment the water starts to boil, cook them for 4 minutes. If you prefer poached eggs, I recommend following the instructions in this recipe.
Toast the slices of white bread in a toaster or, alternatively, use a non-stick pan.
Cut the avocado in half lengthwise, remove the pit and scoop out the flesh with a spoon. Put it on a plate and mash it with a fork. Add a pinch of salt and pepper, the lemon juice and 3 tbsp of extra virgin olive oil, and mix well until you get a smooth cream.
Take the freshly toasted slices of bread, spread 2 tbsp of the avocado cream on each and place the just-cooked egg on top.
Wash the chives and cut them with scissors into small pieces, sprinkling them directly over the Avocado toast with egg. Add plenty of pepper and serve.
