- 3/4 cup heavy cream (whipping cream)

How to make the featherlight jam cake
Start preparing the featherlight jam cake: pour the eggs into a bowl, add the sugar and beat with electric beaters until the mixture is pale and fluffy.
In another bowl pour the cream and partially whip it with the electric beaters; then add it to the eggs and continue beating the mixture with the electric beaters.
Add the flour and baking powder and continue to beat with the electric beaters until you get a creamy batter. Pour the batter into a previously buttered and floured cake pan. Put the jam into a piping bag.
Bake in a preheated conventional oven at 356°F for 8 minutes, then remove the pan and pipe the jam stripes on top; thanks to this first short bake they won’t sink.
Return the cake to the oven and bake for 35 minutes. Once baked, remove from the oven, let it cool and take it out of the pan.
Dust with powdered sugar and serve.
How to store the featherlight jam cake
Store at room temperature inside a cake tin for up to 2 days.
