How to use Parmesan rinds

  • How to use Parmesan or Grana Padano rinds? First, place the Parmesan or Grana rinds in a bowl and cover them completely with water; they should soak for a couple of hours.

  • After soaking, discard the water, take the Grana or Parmesan rinds and scrape them with a knife to remove any impurities on the outer rind. Now that they are clean and soft they are ready to be used.

  • In a skillet: After soaking and cleaning them, cut the rinds into small pieces and heat a nonstick skillet over the stove. When it is hot, add the pieces and heat them for a few minutes, turning them several times. Serve as soon as they are ready and still hot.

  • In the oven: After cleaning and cutting into small pieces, preheat the oven to 356°F and line a baking sheet with parchment paper. Arrange the rind pieces on the sheet and, once the oven is hot, bake for 10 minutes. Serve immediately.

  • In the microwave: After soaking and cleaning them, place the rinds on a microwave-safe plate, spaced apart. During cooking they will puff up and if they are close together they will stick, making them difficult to serve. Cook at 750 W for 2 minutes.

  • Alternatively, after cleaning and cutting into small pieces, you can use the rinds in minestrone, in soups or in broths.
