Neapolitan Baked Anchovies.
Simple, quick, and tasty.
Neapolitan baked anchovies are a main course from the Campania tradition that is very easy to prepare—appetizing and full of flavor. It’s a very quick and delicious dish.
There are various versions of baked anchovies in Campania; this is my mother’s version.

Ingredients
- 28 oz fresh anchovies (about 800 g)
- 2/3 cup breadcrumbs (about 70 g)
- 2 cloves garlic
- to taste parsley
- to taste extra virgin olive oil
- 1 tbsp capers (in salt), rinsed (about 10 g)
- to taste black pepper
- 1 1/3 tbsp white wine (about 20 ml)

Preparation
First of all, clean the anchovies.
Rinse them quickly under running water and clean them gently by removing the head, the guts, and the central bone. Leave the two fillets open like a book and keep the tail (your fishmonger can do this for you, or you can do it at home—it’s very simple). Rinse them again very gently and let them dry slightly on kitchen paper.
Chop a few sprigs of parsley and 1 clove of garlic and set aside.
Rinse the capers well to remove the salt they’re packed in.
Place the other clove of garlic, a grind of pepper, a few parsley leaves, and the rinsed capers in the chopper. Pulse for a few seconds, then add the breadcrumbs and pulse again until combined.
Lightly oil a large frying pan or a round baking dish if you prefer to bake them. Arrange the anchovies side by side in a circular pattern and moisten them with the white wine.
Spread the anchovies with an even layer of the breadcrumb mixture you prepared earlier.
Sprinkle with the chopped parsley and garlic and drizzle with a little olive oil.
Cook the baked anchovies on the stovetop over low heat for 15 minutes if you prefer the stovetop method, or bake them in the oven at 392°F for 15 minutes on the middle-lower rack.
Serve immediately.
