The third tip is to leave the beaters in one spot for the first minute and make only up-and-down movements, not circular ones — a bit like when making mayonnaise, keeping the blender still at the start so it doesn’t split. The fourth and final tip I give you is to use powdered sugar because I think it whips better than granulated sugar and makes the coffee foam more compact and dense.
