Ingredients
- 3 eggs (medium, at room temperature)
- 3/4 cup granulated sugar
- 3/4 cup Greek yogurt (0% fat) (about 200 g, or plain)
- 6 tbsp sunflower oil
- 1 tbsp lemon juice (about 1 tbsp + 1 tsp (approx. 20 g))
- lemon zest
- 1 1/2 cup all-purpose flour
- 1 cup almond flour
- 1 sachet baking powder for cakes (about 16 g (adjust as per your brand))
- 1 pinch salt
- sliced almonds
For the Greek yogurt, almond and lemon cake you will need
- 1 Bowl
- Electric whisk
- 1 Sieve
- 1 Pan 8 2/3 in (22 cm)
Preparation of the Greek yogurt, almond and lemon cake
In a bowl, beat the eggs with the sugar until you obtain a light and frothy mixture.
Add the Greek yogurt at room temperature, the oil, the lemon juice and the lemon zest. Mix well.
Add the sifted flour, baking powder and salt, and the almond flour. Fold in the dry ingredients.
Pour the batter into a 8 2/3 in (22 cm) pan greased and floured and level the surface.
Sprinkle with sliced almonds and bake in a preheated, conventional oven at 356°F for 40-45 minutes.Check for doneness with the toothpick test.
Then remove from the oven, let it cool completely and serve dusted with powdered sugar.
