Ingredients
- 1 2/3 cups All-purpose flour
- 1/3 cup Plain yogurt
- 1 tbsp Extra virgin olive oil
- 1/4 cup Water (about)
- 1 pinch Salt
Preparation of the puff pastry without butter
In a large bowl place the sifted flour and mix it with a pinch of salt.
Make a well in the center and pour in the yogurt and the extra virgin olive oil.
Start kneading, adding the water little by little, until you obtain a smooth, homogeneous and non-sticky dough.
Form a ball, wrap it in plastic wrap and let it rest in the refrigerator for one hour.
After this time, take the ball and press it a little, stretching it on a lightly floured work surface (1).
With a floured rolling pin, roll the dough into a thin sheet, trying to shape it into a rectangle (2).
Fold one side, about one third of the rectangle, toward the center (3), then cover it with the other flap (4).
Wrap everything in plastic wrap and let it rest for half an hour in the refrigerator.
Repeat the folding operation two more times (from 2 to 4), always interspersing with a half-hour rest in the refrigerator.
After the last fold, let your puff pastry without butter rest in the refrigerator for the final half hour, then use it to make the recipe you prefer.
