Ingredients
- 2 1/3 cups roasted bell peppers
- 2 1/3 cups flour (type 0 or 00)
- 3 eggs
- 6 2/3 tbsp milk
- 6 2/3 tbsp vegetable oil
- 2 tbsp grated Pecorino
- 3 oz scamorza, diced
- 1 sachet instant leavening agent for savory preparations
- parsley
- extra virgin olive oil
- salt
Preparation of the savory pepper tart
Cut the roasted peppers into strips and season them with a drizzle of extra virgin olive oil, a little salt and some chopped parsley, mixing well.
In a large bowl pour the eggs, the milk, the vegetable oil and one teaspoon of salt and whisk well.
Add the flour, mix again and then incorporate the grated cheese and the instant leavening agent for savory preparations.Mix until the batter is homogeneous, then add one third of the seasoned peppers and fold them into the mixture.
Also add the diced scamorza.
Butter and flour a 9.5-inch (24 cm) diameter cake pan, or brush it with nonstick baking spray, and pour in the prepared batter, leveling it.
Take the remaining seasoned pepper strips and roll each strip to form a little roll.Arrange the little rolls on the surface of the tart, pressing to make them sink slightly into the batter, until all the peppers are used.
Bake in a preheated conventional oven at 356°F (180°C) for about thirty minutes, until golden.
Remove from the oven and let cool.
Transfer the savory pepper tart to a serving platter and brush the surface with a little extra virgin olive oil.
Serve.
