Ricotta and spinach puff pastry bites are tasty finger-food appetizers that are easy to make.

Ingredients
- 1 roll puff pastry (rectangular)
- 12 oz spinach (fresh)
- 3/4 cup ricotta
- 1/2 cup grated Grana Padano (or Parmesan) (grated)
- 1 egg yolk
- salt
Preparation of Ricotta and Spinach Puff Pastry Bites
Wash the spinach under running water, removing any traces of soil, and rinse thoroughly.
Drain them, place them in a pan, cover with a lid and let them cook for about ten minutes over medium heat, stirring occasionally.
Once cooked, chop them with a knife and put them in a bowl.Add the ricotta, a pinch of salt and the grated Grana Padano and mix well until you obtain a smooth cream.
Transfer it to a piping bag fitted with a wide plain tip.
Unroll the puff pastry and cut it into three strips along the longest side.
Using the piping bag, pipe a strip of filling down the center of each pastry strip and then fold the pastry edges over the filling, sealing it inside to obtain three logs.Cut each log into pieces about 2 inches long and place the bites thus created on a baking tray lined with parchment paper, spacing them apart.
With a smooth-bladed knife make two shallow cuts on each bite to prevent them from puffing up too much during baking.
Beat the egg yolk in a small bowl with a splash of water and brush it over the bites.
Bake in a preheated static oven at 356°F for about twenty minutes, until golden.
Remove from the oven and serve your ricotta and spinach puff pastry bites.
