Ingredients
- 11 oz pasta
- 5 oz mortadella (in a single slice)
- 3 eggs
- 2.3 oz grana (grated)
- salt
- pepper
Preparation of pasta with mortadella
Bring a pot full of water to the boil for cooking the pasta.
Meanwhile, cut the mortadella into cubes.Heat a large nonstick skillet and brown the mortadella cubes, stirring to ensure even cooking and without adding anything else.
When the mortadella is well golden and crispy, remove the skillet from the heat and set it aside.In a bowl, beat the eggs with a pinch of salt, add the grated grana and beat again to make the mixture homogeneous.
Cook the pasta al dente.Drain it and pour it into the skillet with the mortadella cubes, stirring to flavor it.
Add the egg mixture and toss well.
Turn off the heat and serve your pasta with mortadella immediately, adding a sprinkle of pepper if desired.
