Ingredients
- 18 oz potatoes
- 5 oz mozzarella
- rosemary
- extra virgin olive oil
- salt
Preparation of potatoes and mozzarella in a skillet
Peel the potatoes and slice them into very thin slices using a mandoline.
Drain the mozzarella from its preserving liquid and cut it into cubes.
In a nonstick skillet heat a couple of tablespoons of extra virgin olive oil with a little chopped rosemary.Add the potato slices and let them absorb the flavors, stirring gently over a moderately high heat for seven to eight minutes, until they are tender and golden.
Lower the heat, add salt and spread the mozzarella cubes over the potatoes.Cover the skillet with a lid and cook for two to three minutes, until the mozzarella has melted.
Sprinkle with a little more chopped rosemary and turn off the heat.
Serve immediately, your potatoes and mozzarella in the skillet should be piping hot.
