Carrot sticks with cornmeal in the air fryer are an easy, very quick, light and very tasty side dish — perfect to serve as an appetizer or even as a snack. They are carrot batons enhanced with cornmeal, extra virgin olive oil, salt, pepper and aromatic herbs. These carrots stay tender inside and slightly crispy outside. I used baby carrots that are sometimes found in the supermarket refrigerated section, but you can also use regular carrots. My children really love these carrots!   • 7 oz baby carrots
  • to taste salt

  • to taste aromatic herbs (rosemary, sage, thyme)
  • 1 tbsp extra virgin olive oil
  • 1 tbsp cornmeal

Steps to make carrot sticks with cornmeal in the air fryer

  • To prepare the carrot sticks with cornmeal in the air fryer, first take the carrots. I used baby carrots (sometimes found in the supermarket refrigerated section), but you can also use regular carrots: peel them, pat them dry and cut them into not-too-thick sticks. In my case I only halved the baby carrots. Put the carrots in a bowl and season them with extra virgin olive oil, salt, black pepper and aromatic herbs to taste — I used the ready-mixed herbs in glass, but if you don’t have them you can use chopped rosemary, sage and thyme. Finally add 1 tablespoon of cornmeal. Mix well with a spoon so they are evenly seasoned, then transfer them to the air fryer basket.

  • Cook them at 392°F for about 10 minutes since they are baby carrots. If you have larger ones you may need a few extra minutes; check often so they don’t burn. Shake the basket halfway through cooking. The carrots should remain tender inside and slightly crispy outside. Your carrot sticks are ready to enjoy!

Storage and tips

You can store the carrots in the refrigerator in an airtight container for 2 days. Stored in the fridge they will lose some crispness and become a bit softer, but will still be delicious.

You can choose different aromatic herbs to change the flavor, or add paprika or chili pepper for a stronger taste.
