Welcome to my blog! I’m sharing my easy, quick, delicious, and versatile recipe: the yogurt plum cake. This cake is too delicious because it combines the softness of a traditional plum cake with the freshness of yogurt!

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1 cup low fat yogurt (plain)
  • 7 tbsp sunflower oil
  • 2 tbsp butter
  • 2 tbsp milk
  • 2 cups all-purpose flour
  • 1 packet baking powder
  • 1 packet vanillin

Steps

  • Preheat the oven to 350°F and butter and flour a loaf pan.

    In a large bowl, beat the eggs with the sugar and a pinch of salt until light and frothy. Add the yogurt, sunflower oil, milk, softened butter, and vanillin. Mix well until all ingredients are incorporated. Add the sifted flour and baking powder. Gently mix until you get a homogeneous batter, being careful not to over-mix. Pour the batter into the prepared loaf pan, leveling the surface with a spatula.

    Bake the plum cake in the preheated oven for about 45/50 minutes, until a toothpick inserted into the center comes out clean. Remove from the oven (it smells irresistible!), let it cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.

  • Once cool, you can sprinkle the plum cake with powdered sugar for garnish, if desired.

Storage and Tips

The plum cake keeps very well for up to 5 days and maintains its softness if stored properly. I used a cake container! (…But it’s so good that it won’t last until the third day!)

To easily remove the plum cake, you can line the pan with parchment paper!
