Ingredients

  • 1 chicken (whole with skin)
  • Half lemon
  • 1 clove garlic
  • 1 sprig rosemary
  • 3 leaves sage
  • extra virgin olive oil
  • 3 pinches salt
  • 2 pinches pepper

What You Need

  • 1 multicooker with air fryer or oven lid
  • Paper towels
  • Kitchen twine

Procedure

  • Pat the chicken dry with kitchen paper towels, do not wash it, this old custom contaminates washing and cooking areas with bacteria. If necessary, flambé the chicken to remove any feather parts. With the help of the twine, tie the legs so that during cooking it maintains its shape. Chop the aromatic herbs, peel and slice the garlic clove, mix everything with the salt, pepper, and stuff and massage the inside of the chicken.

  • Place the chicken inside the instant pot, spray or brush it with the oil. Finish with 2 pinches of salt and close the pot with the air fryer lid. Start cooking with the same function at 392°F for 15 minutes.

    Then, lower the temperature to 356°F, turn the chicken, and continue cooking for 20 minutes. Towards the end of cooking, check if it is necessary to turn the chicken for even cooking.

  • In this case, the lower resistance of the programmable pot will activate and thus it will be necessary to place a grill, and you do not have to turn the chicken, just like in an oven receiving heat both below and above.

    That said, place the chicken on the grill, season it, and close the pot with the oven lid. Set the pot base at 320°F and the lid temperature at 392°F and start the first cooking for 15 minutes. Then, lower the pot temperature to 284°F and the lid to 356°F, continue cooking for another 20 minutes.
