Puffed Rice, Coconut and Chocolate Bars

The puffed rice, coconut and chocolate bars are made without baking and with only four ingredients.

I made a layer of puffed rice, grated coconut and white chocolate, then covered it all with dark chocolate. After chilling in the refrigerator, I cut the bars.

This recipe is very easy to make and you can use puffed spelt instead of puffed rice, while for the coating you can choose between dark chocolate or milk chocolate.

These bars are ideal for a healthy and tasty snack!

Puffed rice, coconut and chocolate bars

Ingredients

  • 1.4 oz puffed rice (or puffed spelt)
  • 2 tbsp grated coconut ((desiccated))
  • 3.5 oz white chocolate
  • 3.5 oz dark chocolate (or milk chocolate)

  • Spatula
  • Baking pan

Steps

  • To make the puffed rice, coconut and chocolate bars, melt the white chocolate in a bowl over a double boiler.

  • Then add the grated coconut and the puffed rice to the white chocolate. Use a spatula to mix so the chocolate coats the rice evenly.

  • Pour the mixture into a square baking pan (8×8 in) lined with parchment paper and level the surface well. Put in the refrigerator to set for 10 minutes.

  • Melt the dark chocolate in a double boiler and pour it over the surface of the mixture in the pan.

  • Spread the chocolate evenly, then refrigerate for two hours.

  • After the time has passed, remove the parchment paper and cut the bars with a knife.

  • The bars keep in the refrigerator for several days, although it will be hard to resist!
