Apple muffins with hazelnut crumble

The apple muffins with hazelnut crumble are soft baked treats, perfect for enjoying at breakfast or as a snack. I prepared yogurt muffins, then added apple cubes with a sprinkle of cinnamon and finally a hazelnut crumble; once baked and cooled I decorated them with a powdered sugar glaze made with water. I recommend making these muffins: they will be gone in no time!

Apple muffins with hazelnut crumble

Ingredients

  • 1 2/3 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1/2 cup Packed brown sugar
  • 1 Egg
  • 1 small pot (about 1/2 cup) Plain yogurt
  • 1/3 cup Sunflower oil
  • 1 Apple
  • to taste Ground cinnamon
  • 1/3 cup Flour (for the crumble)
  • 1 oz Chopped hazelnuts
  • 1 tbsp Butter
  • 2 1/2 tsp Sugar
  • 1/2 cup Powdered (confectioners') sugar
  • 1 tbsp Water

Preparation

  • To make the apple muffins with hazelnut crumble, sift the flour into a bowl and add the baking powder and baking soda.

  • In a large bowl beat the egg with the brown sugar. Then add the sunflower oil and the yogurt, continuing to mix to combine the ingredients.

  • Incorporate, a little at a time, the flour mixture and stir until the dry ingredients are moistened.

  • Portion the batter into the liners, peel the apple and cut it into cubes. Distribute the apple cubes over the muffins and add a sprinkle of cinnamon.

  • Prepare the crumble. In a bowl add the flour and the butter cut into pieces; with your hands begin to rub the mixture until you obtain the classic sandy texture.

  • Then add the sugar and the chopped hazelnuts; continue to work with your hands to combine well. Crumble the mixture to obtain small crumbs and distribute them over the muffins.

  • Bake the muffins in a preheated oven at 338°F for 20 minutes; check with a toothpick. Once baked, remove from the oven and let them cool.

  • In a small bowl put the powdered sugar and add the water. Stir with a spoon until you obtain a smooth, thick icing; then spread the glaze over the muffins.

  • Store them in the refrigerator and serve as needed. Enjoy!
