Pasta with clams and porcini mushrooms

The pasta with clams and porcini mushrooms is a flavorful first course that brings together the taste of the sea and the flavors of the woods. Only a few ingredients are needed to make this pasta unique: fresh clams, porcini mushrooms, parsley, garlic and olive oil. In this recipe I used fresh pasta, but long pasta or small gnocchetti are also very suitable. Pasta with clams and porcini mushrooms is perfect to impress friends and family at the table!

Pasta with clams and porcini mushrooms

Ingredients

  • 6 oz Pasta
  • 4 oz Fresh clams
  • 4 oz Porcini mushrooms
  • 1 small bunch Parsley
  • 2 cloves Garlic
  • to taste Salt
  • to taste Extra virgin olive oil

Preparation

  • To prepare the pasta with clams and porcini mushrooms, rinse the clams several times under running water to remove any sand.

  • In a large pot, brown one clove of garlic in a drizzle of extra virgin olive oil. Then add the clams and a ladle of hot water, cover with a lid and cook until the clams have fully opened.

  • Wash and clean the mushrooms, then slice them with a knife. In a pan, brown the chopped garlic with a little extra virgin olive oil and the chopped parsley.

  • Add the mushrooms, season with salt and cook for 10-15 minutes; if necessary, add a little of the cooking water. Finally, add the clams as well and toss everything together for 5 minutes.

  • Cook the pasta in plenty of salted boiling water; once cooked (preferably al dente), drain it and transfer it to the pan with the sauce.

  • Serve with a sprinkle of chopped parsley and enjoy!
