Cod Fillets with Potato and Zucchini Chips

The cod fillets with potato and zucchini chips are a fish main course with an irresistible flavor. The cod fillets are baked in the oven with potatoes and zucchini, both cut into thin slices, then seasoned with olive oil, pecorino and gluten-free breadcrumbs. Once cooked you will have a crispy and tasty dish that will win over both adults and children!

Ingredients

  • 11 oz cod fillets
  • 1 potato (large)
  • 2 zucchini
  • 2 tbsp pecorino (grated)
  • as needed gluten-free breadcrumbs
  • as needed dried oregano
  • as needed extra virgin olive oil
  • as needed salt

Preparation

  • For preparing the cod fillets, wash and trim the zucchini, remove the ends and slice them into thin rounds.

  • Peel the potato and cut it into thin slices.

  • Line a baking tray with parchment paper, drizzle with a little extra virgin olive oil and sprinkle some breadcrumbs.

  • Then place the cod fillets, season with salt and add the zucchini and potatoes.

  • Season everything with a drizzle of extra virgin olive oil, a sprinkle of breadcrumbs, oregano and pecorino.

  • Bake in a preheated oven at 392°F for 20 minutes, or until fully cooked and golden.

  • Once cooked, remove from the oven and serve. Enjoy your meal!
