Ingredients
- 2 1/2 cups 00 flour (or all-purpose flour) (or type 0)
- 3/4 cup water
- 1 tsp fresh yeast
- 1 tbsp extra virgin olive oil
- 3/4 tsp salt
- 2 medium potatoes
- to taste grated pecorino cheese
- to taste extra virgin olive oil
- to taste dried oregano
Preparation
To make the pizza with potato chips, crumble the fresh yeast into a small bowl and add the water at room temperature. Stir until the yeast is completely dissolved.
In a large bowl, or in a stand mixer, pour the flour and add the yeast-and-water mixture. Start kneading.
Also add the salt and the extra virgin olive oil; knead until the dough takes shape: it should become a compact, soft mass that does not stick to your hands or the bowl.
Cover the bowl with plastic wrap and let the dough rise for four hours, until it has doubled in volume.
After the rising time, take the dough and put it into a greased rectangular baking pan. Spread the dough inside the pan using your hands.
Let it rise for another 3–4 hours, away from drafts, preferably inside the turned-off oven.
Peel the potatoes and slice them very thinly.
After the second rise, season the pizza with a drizzle of extra virgin olive oil. Then arrange the potatoes over the pizza and drizzle them with a little oil.
Add a sprinkle of oregano and grated pecorino cheese.
Bake the pizza in a preheated oven at 428°F for 15 minutes, or until the desired doneness. Enjoy your meal!
