Ingredients for Baked Meatballs with Artichokes
- 1.1 lbs ground veal
- 2 eggs
- cup stale bread (or breadcrumbs)
- parsley
- 1 clove garlic
- cup grated parmesan cheese
- 4 artichokes
- extra virgin olive oil
- 2 tsp dried oregano
- salt
- 1 glass water
- 1 lemon

Steps to Prepare Baked Meatballs with Artichokes
First, prepare the meatball mixture with eggs, salt, stale bread, parsley, and grated cheese. Mix everything with a fork.
Let the mixture rest for 15 minutes in the fridge covered with plastic wrap, so the meat will absorb all the flavors.
Meanwhile, clean the artichokes by removing the tough parts until reaching the tender ones, trim the tip and the stem.
Cut the artichokes into quarters, and with the knife tip, cut into the choke part to remove any attached leaves. Put the artichokes in lemon water for 10 minutes to prevent browning. Drain the water and remove the lemon slices, seasoning the artichokes with oil, salt, and oregano. Mix and set aside.
Take a baking pan, add a drizzle of oil, and arrange the artichokes. Shape the meatballs from the rested mixture and add them to the artichokes. Season with oil and salt.
Add a glass of cold water and bake for 30 minutes at 340°F. Cook until done.
