Peanut Butter and Frozen Banana Ice Cream

Making the peanut butter and frozen banana ice cream is super easy: you simply freeze a banana, blend it, add peanut butter and a few other ingredients to get the flavor you want and the ice cream is ready. No milk, no cream, no eggs: it doesn’t get any easier or lighter than this.

Although I had seen this recipe all over the internet, I was a bit skeptical at first. Then a friend of mine, Francesca, raved about how good it was on Facebook and I decided to try it. I’m proposing this one as the first recipe (I’ll share more as I try them) — the peanut butter version is the one I liked most. This ice cream is also ideal for anyone following a vegan diet.

Peanut butter — or my homemade peanut butter — together with the taste of banana marry wonderfully. At the cost of a single measly Weight Watchers point, this ice cream is a little treat you can have after dinner or as a snack, even every day: after all it’s like eating a piece of fruit.

Ingredients

  • 1 banana (ripe but not too soft)
  • 1 tsp homemade peanut butter (or ready-made)
  • Points per serving = 1 WW point

  • Hand blender
  • Blender

Preparation

  • Peel the banana and slice it into rounds. Put the banana slices in a closed container in the freezer and wait until they are completely frozen.

    Put the frozen banana slices into the blender jar and pulse until the banana is broken up.

    Add the peanut butter and blend to incorporate it well.

    Keep blending until you obtain a creamy texture, adding, if necessary, 1 or 2 teaspoons of water little by little or unsweetened plant-based milk.

    Here is the peanut butter and frozen banana ice cream. You can put it in the freezer for about half an hour to firm up again so you can use an ice cream scoop. Or you can enjoy it right away as is.

    For me this was a fantastic discovery: after lunch while my boys enjoy their super-caloric ice cream I eat this without feeling any envy. Unfortunately my boys don’t like bananas very much so this ice cream is not for them, although they admitted it is objectively good and incredibly “ice cream-like”.

    Banana frozen and blended like this is already a great ice cream even without adding other ingredients and, obviously, it will have zero WW points, but you can also add other flavors and other fruit.
