The pumpkin spice latte is a spicy beverage that is typically autumnal, similar to a cappuccino that, in addition to milk and coffee, features pumpkin and a mix of spices including cinnamon, ginger, and nutmeg.
The pumpkin spice latte originated from an idea by the well-known American coffeehouse Starbucks, which, 20 years ago, added this beverage to its menu, destined to become a real must, especially associated with the month of October and the upcoming Halloween holiday.
I decided to try it one day when, after making pumpkin gnocchi, I had some leftover pumpkin pulp, and I must say the result was delicious.

Ingredients
- 3 oz pumpkin (steamed pulp)
- 2 teaspoons brown sugar
- 1 teaspoon ground cinnamon (+ more for decoration)
- 1/2 teaspoon ground ginger
- 1 pinch nutmeg (grated)
- 1 2/3 cups milk
- 2 espresso cups coffee
- to taste whipped cream
- 1 tablespoon pumpkin (steamed pulp – optional)
- 1 teaspoon agave syrup (optional)
- to taste ground cinnamon
- 2 cinnamon sticks

Steps
To prepare the pumpkin spice latte, you will need some steamed pumpkin pulp that you might have left over from another preparation.
Add the spices to the pumpkin and mix well so that they are distributed evenly in the puree.
Transfer the spiced pumpkin to a saucepan and also add the sugar and milk.
Bring everything to a gentle boil, stirring occasionally with a spoon, then turn off and add the unsweetened coffee.
At this point, with an immersion blender, slightly whip the pumpkin milk so that it can support the whipped cream.
Pour the milk into the cups and move on to the topping, adding a nice dollop of whipped cream to the surface of the milk, sprinkle with ground cinnamon, also add two cinnamon sticks, and for an even more scenic effect, add a little pumpkin pulp mixed with agave syrup or honey.
Now you are ready to enjoy your pumpkin spice latte, maybe while it’s raining outside and your favorite candle’s scent is in the air 😉.
