Soft Filled Lemon Cake – limonella cake

This soft filled lemon cake is a simple and fragrant dessert, perfect for those who love fresh and delicate flavours. In pastry there are so many aromas, from dried fruit to vanilla, to yogurt and coffee, but lemon remains one of the most loved and I adore it too!
It’s fresh, light, a flavour that never tires and is perfect in every season, capable of making every dessert more enjoyable without weighing it down and with a lively note.
In this easy recipe it is the absolute protagonist to make a soft lemon cake with a delicate and fresh cream, easy to prepare but truly indulgent.

Ingredients

  • 3 eggs
  • 3/4 cup granulated sugar
  • 7 tbsp vegetable oil ((I use corn oil))
  • 1/2 cup milk
  • 1 lemon (juice)
  • 2 lemons (zest)
  • 2 cup all-purpose flour
  • 1 packet baking powder
  • as needed powdered sugar (for final decoration)
  • 1 cup mascarpone
  • 2/3 cup powdered sugar
  • 1 lemon (zest and juice)

Steps

  • Beat the eggs with the sugar using electric beaters until you obtain a light and fluffy mixture.
    Then add the vegetable oil (for me, corn oil) and the milk, continuing to mix.
    Now add the lemon juice and zest, then incorporate the sifted flour with the baking powder, mixing until you get a smooth and homogeneous batter.
    Pour the batter into an 8–9 inch round pan and bake in a preheated conventional oven at 356°F for about 35–40 minutes.
    As always, use the toothpick test to check doneness.

  • For the filling, mix the mascarpone with the powdered sugar and lemon until you obtain a smooth and homogeneous cream.

  • Let the cake cool completely, then cut it in half.
    Place one layer on the serving plate as the base, put the cream into a piping bag and fill with the prepared cream, then place the second and final cake layer on top.
    Finish by dusting the limonella cake with plenty of powdered sugar and we’re ready to taste!
