Tofu, Chocolate and Pecan Muffins

Today I share with you a recipe to prepare treats a little different from the usual, Tofu, Chocolate and Pecan Muffins. Using tofu in the batter is a choice that allows you to obtain a cake with a soft texture and provides a portion of plant-based protein. These are soft muffins without butter and eggs.

Simple vegan tofu chocolate muffins, perfect for a healthy and energetic breakfast or for a tasty and nutritious snack accompanied by a cup of tea or coffee.

During my short vacation last month, at a neighborhood market I found a well-stocked dried fruit seller.
I stocked up on pecans which are not often found, but are very nutritious, rich in minerals and vitamins.
The pecan is made up of protein, dietary fiber and polyunsaturated fats. Rich in magnesium and manganese, potassium, phosphorus, calcium, iron, zinc, copper, selenium, thiamine, vitamin E, vitamin A, vitamin B and vitamin C.
