  • 3 tbsp butter (melted)
  • to taste oregano (or thyme)
  • 7 oz cream cheese (type: Philadelphia)
  • 4 oz ricotta (well drained)
  • 1 oz grated Parmesan
  • 2 sheets gelatin sheets
  • 2 tbsp milk
  • to taste salt

How to make the savory cheesecake eggs

Because the mold we use is flexible silicone, we’ll work in reverse: first we’ll insert the cream and then close it with the cracker base. Serve 3 eggs per person.

  • To prepare the savory Easter appetizer, first make the filling. Soak the gelatin sheets in cold water for 10 minutes. In a bowl, beat the cream cheese, ricotta, and Parmesan until creamy. Season with salt, pepper, and aromatics.
    Warm the milk, squeeze out the gelatine sheets and dissolve them in the warm milk. Add the milk to the cheese mixture, stirring quickly to avoid lumps.

  • Pipe the filling into the mold cavities using a piping bag (or a teaspoon). Fill to about 3/4, leaving room for the cracker base.
    Tap the mold on the work surface to remove any air bubbles that would spoil the eggshell.

  • Now add the base: finely crush the crackers and mix them with the melted butter.
    Distribute the cracker mixture over the filling in each cavity. Press firmly with the back of a spoon to compact the base: this will give structure to the mini cheesecake.

  • Place the mold in the fridge for 4 hours, perfectly level. This is the only way to remove the eggs perfectly without breaking them or leaving the pattern stuck to the silicone. Remove the eggs from the mold while they are still very cold.
