Slices with ricotta and chocolate

This ricotta mousse with chocolate sprinkles is perfect to spread on rusks, on toasted bread or even on Wasa. Maybe I have a soft spot for chocolate but I love it, so last night I had this idea, I refined it this morning and then yum, how delicious!

But it’s also a great idea for an afternoon snack; just halve the amounts and use only one rusk.

I think children will also love this breakfast. Here in the Netherlands the chocolate sprinkles are called hagelslag and are a Dutch breakfast tradition. At the end of the recipe you’ll find some curiosities about these hagelslag. But now let’s prepare it.

Ingredients

  • 2 oz (about 1/4 cup) ricotta
  • 2.5 tsp chocolate sprinkles (or shaved chocolate)
  • 1 teaspoon honey
  • 2 toasted rusks (or 3 light Wasa (Wasa Fibres))
  • Points for a full portion (2 slices) = 6 WW points
  • Points for a half portion (1 slice) = 3 WW points
  • Points for the mousse only = 4 WW points

Steps

  • Weigh the ricotta and add the teaspoon of honey. Mix well and spread this mousse on the rusks, then sprinkle with the chocolate sprinkles.

  • Instead of sprinkles you can grate good chocolate or cut it into shavings with a knife. And if you use light Wasa, I think in Italy they’re called Wasa Fibres, you can eat 3 because they have fewer Weight Watchers points than the rusks.

  • You can serve them with a latte coffee and a fruit of your choice: I like the orange and chocolate pairing, so I chose an orange.

    For me this is one of the tastiest breakfasts that surely doesn’t make me feel like I’m on a diet: try it yourself and let me know if you liked it.

Curiosities

Speaking of sprinkles, here in the Netherlands you can find many types: white chocolate, milk and dark chocolate and even other flavors, shapes and colors. In supermarkets the space dedicated to the different varieties of hagelslag is more or less as large as the one dedicated to coffee in our Italian supermarkets!

And there is also an anise-flavored variety that comes in two colors: blue and pink. When a baby is born and friends and relatives go to visit to meet him, it’s typical to serve trays with rusks and sprinkles. Obviously blue for a boy and pink for a girl. Pretty striking, right?
