The tiramisu without mascarpone with fruit is a dessert that truly satisfies the palate but, like all my recipes, it is light enough to enjoy even if you are on a diet. In fact I replaced the mascarpone with ricotta, which is much lighter.
Personally, when I crave something sweet I make this tiramisu right away, since it is very quick to prepare. This dessert is also a great way to offer a healthy snack to children — not because children should be on a diet but to encourage them to eat more fruit and avoid packaged snacks. For children it’s better to avoid coffee soaking and instead dissolve half a teaspoon of cocoa in a small cup of warm milk.
I used banana, a fruit available in every season that makes the preparation even faster. Of course you can choose the fruit you prefer, but my advice is that, being a spoon dessert, it’s best to use soft-fleshed fruit. For example you could choose strawberries, berries, mango, peaches, or ripe pears. Let’s prepare it.

Ingredients
- 4 ladyfingers (or 1 package of Pavesini cookies)
- 1 coffee (black; for children dissolve 1/2 tsp cocoa in about 2 fl oz (1/4 cup) of warm milk)
- 2 tbsp ricotta (about 1 oz (30 g))
- 1 tsp honey
- 1 piece of fruit of your choice (about 5.3 oz (approximately 1 cup / ~150 g))
- 1 tsp unsweetened cocoa powder
- WW points per serving = 5 points
Preparation
Add the honey to the ricotta and mix until you obtain a creamy texture. Clean the fruit you chose to use and slice it thinly or chop it into small pieces.
Quickly dip 2 ladyfingers in the coffee (or in melted chocolate for the kids’ version) and place them side by side on a small plate. Cover the ladyfingers with half of the ricotta cream, add half of the fruit, then repeat to create a second layer.
Finish with the remaining fruit and finally dust the surface with the cocoa powder.
