Coffee Bricks: easy and indulgent filled cookies

Coffee Bricks quick sweets and very indulgent with DRY COOKIES like Oswego and a veil of butter whipped into a foam with powdered sugar scented with vanilla.

These LARGE FILLED COOKIES should not be overly soaked in the coffee and brandy mix and then left to chill in the refrigerator until ready to serve.

To make them even more tempting I dusted them with cocoa powder.. delicious!!!!

FOR EGG PASTEURIZATION, SEPARATE YOLKS AND WHITES INTO TWO DIFFERENT BOWLS AND ADD TO EACH THE SAME WEIGHT OF SUGAR, THEN COOK IN THE MICROWAVE OR A BAIN-MARIE UNTIL THE PREPARATION REACHES AND MAINTAINS A TEMPERATURE OF 162/163 °F FOR 5–6 SECONDS.

Ingredients – COFFEE BRICKS RECIPE

  • 7 oz Dry cookies (like Oswego)
  • 7 tbsp Butter (soft)
  • 2 egg yolks
  • 2/3 cup Powdered sugar
  • 1 1/2 vanilla bean
  • 3.38 fl oz Espresso coffee (cooled)
  • 2 tbsp Cognac or brandy

  • Fine mesh sieve
  • Hand mixer

FOR THE PREPARATION OF THE COFFEE BRICKS RECIPE

  • For the filling whip the yolks with the powdered sugar, then add the soft butter. Blend the mixture well, adding the seeds from half a vanilla bean (VANILLA).

  • For the syrup mix the cold espresso coffee with the chosen liqueur and quickly soak the dry cookies, then drain off any excess liquid.

  • Now assemble the coffee bricks by covering a first cookie with a thin layer of filling, then placing a second cookie, putting another layer of BUTTERCREAM, and closing with a third cookie briefly flavored with the coffee and liqueur mix.

  • Arrange the filled cookies in a single layer on a plate, cover with plastic wrap, and leave the coffee bricks in the refrigerator for a few hours.

  • At tasting time dust these indulgent sweets with cocoa powder (I use unsweetened) and serve with a coffee or simply as a delicious and very easy treat! Enjoy!!
