Today I prepared these sorghum flour pancakes, tasty, soft, indulgent — ideal for breakfast or a Sunday brunch.
About sorghum, this gluten-free grain, I’ve talked about it often; I find it very good with a delicate flavor. I use it both as whole grain and as flour, as in this case.
I ground the grain with the Faribon electric grain mill, which in a single pass separates bran and flour and thus preserves the nutritional properties of the sorghum grain, allowing us to always have fresh flour when needed.

Ingredients for Sorghum Flour Pancakes
- 3/4 cup sorghum flour
- 1/3 cup oat flour
- 2/3 cup plant-based milk
- 2 tbsp almond butter (100%)
- 1 pinch sea salt
- 3 tbsp rice malt (or maple syrup)
- 8 strawberries
- 1 tbsp extra virgin olive oil
- 1 tsp baking powder

Steps for Sorghum Flour Pancakes
In a bowl, mix the flours, the baking powder, and the pinch of salt.
In a small bowl, dissolve the rice malt in the lukewarm milk along with the almond butter. Pour the liquids over the dry ingredients and beat well with electric beaters until you have a creamy batter.
Heat a pan, lightly oil it with a brush, and pour a tablespoon of batter. If your pan is larger you can make two or three at the same time. Let cook for a few minutes until you see bubbles on the surface, gently flip, and finish cooking.
Transfer to plates, drizzle a little more rice malt and add slices of strawberries.
Tips from Timo and Lentils
You can store the pancakes in the refrigerator for one day. Replace rice malt with maple syrup if you prefer a more traditional flavor; you can use other types of fruit or sprinkle with chopped dried or fresh nuts.
