  • 5.3 oz ladyfingers
  • 1 cup mascarpone
  • 4 large egg yolks (about 4)
  • 6.35 oz sugar
  • 0.85 cup fresh heavy cream
  • 0.42 cup coffee
  • to taste unsweetened cocoa powder

Steps for preparing rolled tiramisu

  • First, prepare the coffee and let it cool. Whip the egg yolks with the sugar until they are light and frothy. I used bottled yolks, you can find them in the refrigerated section and they are already pasteurized.

  • Work the cream, which must be very cold, with the electric whisks. When it is semi-whipped, add the mascarpone and continue working until you have a thick foam. Incorporate the yolks by mixing with a hand whisk, gently.

  • Lay out a sheet of plastic wrap on a work surface. Create a rectangle with the ladyfingers soaked in coffee. Sprinkle them with some unsweetened cocoa powder. Cover them with the mascarpone cream and roll it up, helping yourself with the plastic wrap. Let the roll rest in the fridge until the next day.

  • All that’s left is to remove the roll from the plastic wrap and serve it sprinkled with unsweetened cocoa powder.
