Steps to Prepare Mini Chocolate Muffins
I always put the eggs and sugar in the stand mixer first and leave them for quite a while so that they whip well and change color.
Meanwhile, as the mixer goes, I sift the flour with the cocoa and baking powder. I add the oil slowly to the batter and when it is incorporated I add all three sifted powders together.
I preheat the fan oven to 356°F
I prepare the paper liners in the small muffin pan and distribute the batter evenly. I add chocolate chips on top of the mini muffins and immediately place them in the oven for 25 minutes.
