Very easy and quick puff pastry mini pizzas.
I love pizza! I think I could eat it at any hour of the day or night, even after a huge meal.
That said, often you don’t have the time or patience to knead and wait for dough to rise, yet you still want to enjoy classic pizza.
In these cases, when I have an irresistible craving I make these puff pastry mini pizzas: super quick, very crispy and delicious.
Perfect to accompany an aperitif with friends, as a quick snack or a treat.
You’ll see it takes longer to read this article than to make them.

Ingredients

  • 1 roll Puff pastry (rectangular)
  • 3/4 cup Tomato purée (passata) (about 7 fl oz (200 ml))
  • 4.4 oz Mozzarella
  • to taste Oregano
  • to taste Extra virgin olive oil
  • to taste Salt

Preparation

  • First, take the roll of puff pastry and unroll it on a work surface.
    Then, using a round cookie cutter about 1 1/8 in in diameter (approximately 3 cm), cut out many circles.
    If you don’t have a cookie cutter you can easily use a glass to form your circles.
    Once you have prepared the puff pastry circles, transfer them to a baking sheet lined with parchment paper or lightly brushed with oil.
    Take the tomato purée and, with the help of a teaspoon, place a little purée on each circle.
    Season with a pinch of salt. Meanwhile, take the mozzarella and chop it with a knife until it is reduced to very small pieces.
    Place a little mozzarella on top of the tomato purée on each mini pizza.
    Sprinkle a little oregano on each one.
    Bake in a preheated oven at 410°F for about 10 – 15 minutes.
    They will be ready when the puff pastry has puffed up and turned slightly golden.
    Remove from the oven and let cool slightly before serving.

Notes

You can enrich your mini pizzas with anchovies in oil or simply place a rinsed caper or a slice of frankfurter on each one.
Do not throw away the leftover pastry from the circle cuttings.
Cut it irregularly with a knife into many strips.
Coat with a drizzle of olive oil and some rosemary and bake together with the mini pizzas.
Or sprinkle with grated Parmesan — they will become a tasty snack because in the kitchen … nothing goes to waste!
