We flavored them with smoked paprika and rosemary, but you can really experiment with the spices you prefer and create a different variation each time.

- 1 7/8 cups cooked chickpeas
- 1 tsp smoked paprika (level)
- 1 tbsp all-purpose flour (level)

- 2 tbsp extra virgin olive oil
- 1 pinch black pepper
- salt
- 1 pinch chili powder (optional)
Preparation
To prepare the crispy chickpeas, start with chickpeas that are already cooked: canned or home-cooked both work well.
Drain them in a colander and decide whether to let them air-dry for about ten minutes or pat them dry with a clean kitchen towel or paper towels.
Then transfer them to a bowl and season with salt, flour and smoked paprika. If you like stronger flavors, you can also add a pinch of chili powder. Finely chop the needles from one sprig of rosemary and add them to the chickpeas.
Mix gently, trying not to break them, but ensuring they are well coated with the ingredient mix.
Preheat the oven to 428°F. Meanwhile, spread the chickpeas on a baking sheet lined with parchment paper, arranging them in a single layer: this step is essential to achieve crispiness.
Add a drizzle of extra virgin olive oil and tilt the baking sheet slightly to distribute it evenly.
Bake for about 35-40 minutes, stirring occasionally to ensure even cooking.
When ready, the chickpeas will be nicely golden and crunchy: remove from the oven and let them cool completely before serving.
