Mint Popsicles

After making the sour cherry popsicles, which were truly delicious, I wanted to try the mint version as well. Easy and quick to prepare, these popsicles are a refreshing little treat for the palate thanks to the fresh, aromatic taste of mint. Perfect for hot days, they’re also pleasing to the eye: their bright color immediately invites you to have another!

Ingredients for 4 popsicles

  • 1 1/4 cups water
  • 3 tbsp + 1 tsp mint syrup mint syrup
  • 8 leaves mint

Preparation of the popsicles

  • To make the mint popsicles you will need a mint syrup, preferably the cocktail-style one, which is thinner and better suited to this recipe.
    In a measuring jug pour 1 1/4 cups of water and 3 tbsp + 1 tsp of mint syrup, then stir vigorously to combine the two ingredients well. Taste and, if necessary, adjust the sweetness: add more water if it’s too sweet, or a few drops of syrup if it’s too mild.
    Pour the liquid into the popsicle molds, just below the indicated rim, and place one or two mint leaves in each. Then insert the sticks, transfer gently to the freezer and leave to freeze for at least 5-6 hours before enjoying them.

Tips

To remove the popsicles from the mold without trouble, I recommend taking the mold out of the freezer and letting it sit at room temperature for a couple of minutes.

Mold sizes vary from brand to brand, so with this quantity you may get more or fewer popsicles than the number indicated in the recipe.
