Quick quick tartines for aperitif, are a timeless classic: no-bake, easy and fast. Try also the bread tartines with ham-and-walnut mousse and the fish tartines ready in 5 minutes. The secret to making them pretty is to use cookie cutters, but today I want to offer you an equally pretty, easy and delicious alternative. My tartines are filled with smoked salmon and mayonnaise, and with spreadable cheese and cooked ham. If you prefer, you can also use mousses.

Ingredients for 24 tartines
- 4 oz white bread (2 slices, crusts removed)
- as needed mayonnaise
- 3 oz smoked salmon
- 4 oz white bread (2 slices, crusts removed)
- 7 oz cooked ham
- as needed spreadable cheese (cream cheese)
- as needed crushed pistachios
- as needed peppercorns
- 4 oz white bread (2 slices, crusts removed)
- 2 tbsp mayonnaise
- 1 tbsp mustard
- 1 tbsp ketchup
- 1 tbsp yogurt
- 10 pieces shrimp
- as needed peppercorns
How to make the quick tartines for aperitif
Take a slice of bread and spread it with mayonnaise, add the slices of smoked salmon on top and close with another slice of bread.
Then cut into small squares (you should get about 8 pieces) and decorate with a small dollop of mayonnaise and a strip of salmon.
For the second garnish take a slice of sandwich bread and fill with spreadable cheese and cooked ham.
Close with another slice and spread some cheese on the surface, then decorate with crushed pistachios and a few whole peppercorns.
For the third filling, mix the mayonnaise, ketchup, mustard and yogurt in a bowl.
Fill the first slice of bread with the prepared sauce, close with the second slice.
Spread a little more sauce on top and place a small dollop of mayonnaise in the center to put a shrimp on. Garnish with red pepper and parsley.
Arrange on a plate alternating each variety. Enjoy your meal.
Storage and tips for the quick tartines for aperitif
If well stored, they can be prepared the day before, up to a maximum of 24 hours before the event. It is preferable to garnish them shortly before serving. The advantage of preparing these tartines in advance is that the bread absorbs the moisture of the filling, thus ensuring a flavorful and unique taste.
