- 2 oz celery (about 1 stalk)
- 1.5 oz onion (about 1/4 cup chopped)
- 3 tbsp extra virgin olive oil
- 3.5 oz cream cheese (or ricotta)
- 1.5 oz almonds (chopped)
- to taste salt

Let’s go to the kitchen to prepare
Prepare the Trofie with carrot cream
It’s easy and quick-
The first thing to do is put the pot on the stove to cook the pasta.
In a smaller pot, put the chopped onion, chopped celery and chopped carrots.
Pour in the oil and a small cup of water and let it flavor for 5 minutes.
At the end of cooking add the almonds
Adjust salt and pepper and let it flavor for another 3 minutes.
Add a teaspoon of curry and puree with an immersion blender.
Add the cream cheese, mix and
transfer the carrot cream to a pan.
Lower the trofie into the boiling water and as soon as they are ready lift them out with a skimmer
and add them to the pan with the carrot cream. Toss over high heat and, if needed, add a ladle of the pasta cooking water.
Serve immediately with a sprinkle of chopped parsley.
