Ingredients Tortiglioni with Ragù Nuvola Zero
Let’s go shopping
- Half onion
- Half carrot
- Half stalk celery
- 3 tbsp extra virgin olive oil
- 2 cups tomato passata
- 10.6 oz ground beef
- to taste salt
- to taste basil
- 7 oz tortiglioni (Nuvola zero)

Steps
Let’s cook
The first thing to do is prepare the vegetable mirepoix. Clean and finely chop the onion, carrot and celery.
Transfer it to a pot or a pan with the oil and a small cup of water. (we don’t sauté, we simmer). Let it cook for about 3 minutes.
When it has wilted, add the passata and a small pinch of salt.
Then, still without frying, as soon as the sauce returns to a simmer add the lean ground beef.
Let the ragù cook for about 30 minutes with a splatter guard on top and meanwhile …
Put the pot on the stove for the pasta.
As soon as the water boils add a pinch of salt and put in the pasta. This pasta doesn’t overcook and needs only 10 minutes to be al dente.
The ragù is ready; add a few basil leaves.
Take only the amount of ragù you need and put it in a wide pan so we can properly toss the pasta.
Now the pasta is cooked, drain it and add it to the pan with the ragù. Toss over high heat.
Serve hot with a basil leaf.
