Ingredients to make the Turkey and Cheese Terrine Wrapped in Ham

  • 1.3 lb turkey (ground, preferably thigh or upper thigh)
  • 7 oz cooked ham (slices, thin but whole, used for wrapping)
  • 5.3 oz provola (or scamorza, cut into sticks)
  • 1 onion (small)
  • 2 eggs (medium)
  • 2 tablespoons grated Parmesan
  • 2 pinches salt
  • to taste black pepper (ground)
  • 1 pinch nutmeg
  • 1 chopped black olives (optional, to enrich the filling)
  • 2 tablespoons breadcrumbs (to help bind the terrine, only if needed)

Preparation Turkey and Cheese Terrine Wrapped in Ham

  • Finely chop the onion and soften it in a pan with a drizzle of oil until it becomes translucent.

    Using cooked rather than raw onion will make your terrine incredibly easy to digest and much more aromatic.

  • The base mixture: In a large bowl, combine the ground turkey, the slightly cooled onion, the Parmesan, the eggs and the seasonings.

    Work it well with your hands: the mixture should be homogeneous. If you find it too sticky, add a little breadcrumbs.

  • Let’s prepare the “Wrapping”: Take a loaf pan and line it with the slices of cooked ham.

    Make sure the slices hang slightly over the edges of the pan: these “flaps” will be used shortly to close the terrine like a gift package.

  • Assembling the terrine: Spread half of the meat mixture evenly on the bottom of the pan, smoothing it well.

    Create a small central groove and insert the cheese sticks (not too close to the side edges so the cheese doesn’t all come out during baking).

    Cover with the remaining meat and press well to compact.

  • Closing and baking: Fold the ham flaps over the meat to seal everything in.

    Cover the pan with a sheet of parchment paper: this will protect the ham and keep the meat juicy.

    Bake in a conventional oven preheated on the lowest rack at 356°F for about 35-40 minutes.

  • In the last 10 minutes of baking, remove the parchment paper and let the ham become golden and crispy by moving the pan to the middle rack.

The turkey terrine keeps very well in the refrigerator for 2-3 days, stored in an airtight container. When ready to serve, we recommend warming it slightly in the oven or microwave to bring back the melty cheese center.


Can it be frozen? Yes, you can freeze it either raw or cooked (once cooled). If you freeze it cooked, thaw it slowly in the refrigerator before reheating to preserve its texture.

💡 My Tips

Resting is sacred: Once you remove it from the oven, don’t cut it immediately! Let it rest outside the oven for at least 10 minutes. This allows the meat juices to settle and the cheese to steady: you’ll get perfect, clean slices just like in the photo.

Trick for extra tenderness: Because turkey is very lean, for an extra-soft result you can add a tablespoon of ricotta or a splash of milk to the mixture.

The right pan: If you don’t have a loaf pan, you can shape the meat directly on a sheet of parchment, roll it up and close it like a “candy.” It will bake perfectly that way too!

🔄 Tasty Variations

Rustic version: Replace the cooked ham wrapping with slices of pancetta or speck. The turkey mixture, being delicate, pairs wonderfully with a smoky touch.

Vegetable heart: For a more complete one-dish meal, along with the cheese you can add sautéed spinach or small sautéed bell pepper cubes.

Mediterranean touch: Add a handful of chopped Taggiasca olives and some chopped sun-dried tomatoes in oil to the mixture.
